Simple Potato Salad
A simple potato salad is a perfect side dish for any smoked meat.

- 3 pounds of waxy white potatoes (peeled or washed with skin on)
- Sea salt
- 1 cup good mayonnaise
- 1/4 cup plain kefir or soft yogurt
- 3 TBS whole grain brown mustard
- 2 stalks diced celery
- 1/3 cup diced red onion
- Sea salt and cracked black pepper to taste
- 3 TBS chopped fresh dill or tarragon (optional)
1.Place the potatoes and 1 tablespoon of salt in a large pot of cold water. Bring the water to a rolling boil. Reduce the heat to a simmer and cook for approximately 15 minutes, until the potatoes are just tender and not mushy when pierced with a knife or fork. Drain the potatoes in a colander and allow them to cool until they can be handled.
2.In a large bowl, whisk together the mayonnaise, kefir, mustard, herbs, 1 teaspoon of salt, and 1 teaspoon of pepper.
3.Dice the celery and onion.
4.Once the potatoes have cooled down enough to handle, cut them into bite-sized pieces, approximately 1 to 1-1/2 inch chunks. Place the potatoes, celery, and onions into the bowl with the dressing. Toss to coat well. Cover with plastic wrap and refrigerate until chilled or at room temperature.
5.Serve alongside your sliced tri-tip.
