Smoked Marinated Chicken Skewers
Smoked and marinated chicken skewers make a perfect food for summer cookouts or for an easy dinner. Lightly charred smokiness makes these kabobs simply irresistible.

Ingredients
3 lbs skinless, boneless chicken breasts
1/2 cup soy sauce or tamari
1/2 cup raw honey
6 TBS toasted sesame oil
3 TBS orange juice
3 cloves garlic minced
1 tsp ground ginger
1 tsp cracked black pepper
16 oz button mushrooms
1 large or 2 medium red or green bell pepper
Instructions
1.In a large covered container, mix honey, soy sauce, sesame oil, and orange juice. Stir in garlic, ginger, and pepper. Reserve 1/3 cup of the marinade in a separate bowl.
2.Cut chicken into 1” cubes. Coat chicken with the larger portion of marinade and refrigerate for about 2 hours. After 2 hours, let chicken come to room temperature.
3.Soak skewers in water. Wipe mushrooms and cut large ones in half. Thread chicken, bell pepper, and mushrooms onto skewers.
4.Preheat smoker to 250°F. Place skewers in the smoker for 60 minutes, rotating occasionally.
5.Brush skewers with reserved marinade. Smoke for another 15-20 minutes until chicken reaches 165°F to 170°F internally.
6.Serve with napkins or transfer to a platter with cooked rice.
