Ingredients

  • 2 lbs Chicken Wings

Wing Seasoning:

  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp BBQ Wing Rub (or Orleans Marinade)

Honey Garlic Sauce:

  • 1 tbsp Butter
  • 1 tbsp Fine Black Pepper
  • 4 cloves Garlic (minced)
  • 1/3 cup Honey
  • 2 tbsp Worcestershire Sauce

Pro Tools

  • Heat-Resistant BBQ Gloves
  • Meat Thermometer
  • Wood Chips

Wing Tips

  • Check Doneness: Pierce the center of the thickest wing with a toothpick and press down gently. If the juices run clear, they are ready!
  • Crispy Texture: Always ensure your wings are patted completely dry with a paper towel before applying any seasoning.
  • Safe Temp: Always cook poultry to a safe internal temperature of 165°F minimum.

Step-by-Step Instructions

1.

Prep & Marinate

  • Pat the chicken wings completely dry. Score two shallow cuts on one side of each wing—this helps the meat absorb maximum flavor.
  • Place wings in a bowl. Sprinkle with salt, black pepper, and your BBQ wing rub. Toss until evenly coated.
  • Cover with plastic wrap and let them marinate in the fridge for 4 hours.
2.

Build The Smoke

  • Preheat your EAST OAK smoker to 275°F.
  • Fill the water tray to create a humid cooking environment (this prevents the wings from drying out).
  • Add your preferred wood chips to the loader box to build that rich, smoky flavor profile.
3.

Smoke The Wings

  • Once the smoker is up to temp and producing good smoke, place the wings directly on the smoker racks.
  • Smoke at 275°F for 1 hour. Keep the door closed to lock in the heat and flavor!
4.

Make The Sauce

  • While the wings are finishing, heat a pan over low heat. Melt the butter and add the minced garlic with a splash of olive oil. Sauté for about 1 minute until fragrant.
  • Stir in the Worcestershire sauce, honey, fine black pepper, and half a bowl of water.
  • Simmer and stir continuously over low heat until the sauce reduces and thickens into a beautiful, sticky glaze.
5.

Toss & Serve

  • Remove the hot, smoked wings from the smoker (use your insulated gloves!).
  • Toss them directly into the pan with your homemade honey garlic sauce, mixing until every wing is generously and evenly coated.
  • Plate them up and serve immediately. Enjoy!
