Step-by-Step Instructions
1.
Prep & Marinate
- Pat the chicken wings completely dry. Score two shallow cuts on one side of each wing—this helps the meat absorb maximum flavor.
- Place wings in a bowl. Sprinkle with salt, black pepper, and your BBQ wing rub. Toss until evenly coated.
- Cover with plastic wrap and let them marinate in the fridge for 4 hours.
2.
Build The Smoke
- Preheat your EAST OAK smoker to 275°F.
- Fill the water tray to create a humid cooking environment (this prevents the wings from drying out).
- Add your preferred wood chips to the loader box to build that rich, smoky flavor profile.
3.
Smoke The Wings
- Once the smoker is up to temp and producing good smoke, place the wings directly on the smoker racks.
- Smoke at 275°F for 1 hour. Keep the door closed to lock in the heat and flavor!
4.
Make The Sauce
- While the wings are finishing, heat a pan over low heat. Melt the butter and add the minced garlic with a splash of olive oil. Sauté for about 1 minute until fragrant.
- Stir in the Worcestershire sauce, honey, fine black pepper, and half a bowl of water.
- Simmer and stir continuously over low heat until the sauce reduces and thickens into a beautiful, sticky glaze.
5.
Toss & Serve
- Remove the hot, smoked wings from the smoker (use your insulated gloves!).
- Toss them directly into the pan with your homemade honey garlic sauce, mixing until every wing is generously and evenly coated.
- Plate them up and serve immediately. Enjoy!
